The worst of these plagues was the last one and this caused the death of every Egyptian first-born. The Israelites escaped the plague by marking their home doorposts with the blood of slaughtered spring lambs, a signal for the spirit of the Lord. When the Jews were freed, they left in a hurry, not being able to afford to wait for the leavening of the bread dough. Hence, instead of leavened bread, matzo, or flat unleavened bread is eaten during Passover.
